A warm and nourishing vegetable barley soup that’s perfect for chilly days.

Ingredients

  • 1 cup pearl barley
  • 4 cups vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery, and sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add vegetable broth, barley, tomatoes, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 40-50 minutes.
  6. Check barley for tenderness, and adjust seasoning if necessary.
  7. Serve hot and enjoy!
