Ingredients

  • 1 cup lentils
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 6 cups vegetable broth
  • 1 lemon, juiced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 2 cups spinach

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and carrots, sautéing until the onion is translucent.
  3. Stir in the minced garlic and turmeric, cooking for another minute.
  4. Add the lentils, vegetable broth, lemon juice, salt, pepper, and bay leaf to the pot. Bring to a boil.
  5. Reduce the heat and simmer for about 25-30 minutes, until lentils are tender.
  6. Stir in the spinach just before serving.
  7. Remove the bay leaf and serve hot.

Notes

  • Adjust the consistency of the soup by adding more broth if desired.
  • This soup can be stored in the refrigerator for up to a week.
