- 1 cup lentils
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 1 teaspoon turmeric powder
- 6 cups vegetable broth
- 1 lemon, juiced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 2 cups spinach
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and carrots, sautéing until the onion is translucent.
- Stir in the minced garlic and turmeric, cooking for another minute.
- Add the lentils, vegetable broth, lemon juice, salt, pepper, and bay leaf to the pot. Bring to a boil.
- Reduce the heat and simmer for about 25-30 minutes, until lentils are tender.
- Stir in the spinach just before serving.
- Remove the bay leaf and serve hot.
