  • 2 cups cooked jasmine rice
  • 1 pound boneless, skinless chicken thighs
  • 1 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 cup shredded cabbage
  • 1/2 cup sliced green onions
  • 1 cup diced mango
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large skillet, heat sesame oil over medium heat. Add chicken thighs and cook until browned and cooked through, about 5-7 minutes per side.
  2. In a small bowl, mix sweet chili sauce and soy sauce. Pour over the chicken, coating it well.
  3. Remove chicken from skillet and let it rest for a few minutes. Slice the chicken into strips.
  4. To assemble, place a scoop of jasmine rice at the bottom of a bowl. Top with sliced chicken, shredded cabbage, diced mango, and chopped cilantro.
  5. Drizzle with additional sweet chili sauce if desired and serve immediately.
