  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. Peel and chop the butternut squash and sweet potatoes into cubes.
  2. In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent.
  3. Stir in garlic, cumin, and cayenne; cook for another minute.
