This hearty Spicy Butternut Squash Soup combines the natural sweetness of butternut squash and sweet potatoes with the savory flavor of turkey bacon, creating a cozy and satisfying dish perfect for chilly days.

  • 1 medium butternut squash, peeled and diced
  • 2 medium sweet potatoes, peeled and diced
  • 4 slices turkey bacon, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, cooking until softened.
  3. Add the butternut squash, sweet potatoes, cumin, paprika, cayenne, and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for about 20 minutes, or until the vegetables are tender.
  5. Use an immersion blender to blend the soup until smooth. If desired, adjust seasoning with salt and pepper.
  6. Serve the soup topped with the reserved turkey bacon.

Notes

  • This soup can be made ahead and stored in the fridge for up to 4 days.
  • For a creamier texture, add a splash of coconut milk before blending.
