  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 4 cups mixed greens
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, turkey bacon, black beans, corn, red bell pepper, avocado, and mixed greens.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
