A refreshing and hearty Southwest Chicken Salad topped with crispy turkey bacon, perfect for lunch or dinner.

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1/2 cup red onion, thinly sliced
  • 1 cup shredded lettuce
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken, cherry tomatoes, corn, black beans, avocado, turkey bacon, red onion, shredded lettuce, and cilantro.
  2. In a separate bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or chill in the refrigerator until ready to serve.

Notes

  • For added crunch, consider topping the salad with tortilla chips.
