  • 2 pounds boneless chicken thighs
  • 1 cup onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk
  • 2 tablespoons garam masala
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat vegetable oil in a pan and sauté onions until translucent.
  2. Add garlic and ginger, cooking for another minute.
  3. Transfer to slow cooker and add chicken, crushed tomatoes, coconut milk, and spices.
  4. Stir well to combine everything and cover the slow cooker.
  5. Cook on low for 6-7 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and mix back into the sauce.
  7. Garnish with fresh cilantro before serving.
