  • 2 pounds chicken thighs
  • 4 cups vegetable broth
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • salt to taste
  • black pepper to taste

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add the vegetable broth, carrots, celery, onion, and garlic.
  3. Sprinkle with thyme and rosemary, then add the potatoes and frozen peas.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 6-8 hours or until the chicken is tender.
  6. Once cooked, shred the chicken in the slow cooker and mix everything well before serving.

  • This stew can be made a day in advance and stored in the refrigerator.
