2 cups shredded cooked chicken
1 can enchilada sauce
8 corn tortillas
1 cup shredded cheese
1 onion, diced
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a slow cooker, combine the shredded chicken, enchilada sauce, diced onion, cumin, garlic powder, salt, and black pepper.
Layer the bottom of the slow cooker with 3 tortillas, torn into pieces.
Spread half of the chicken mixture over the tortillas and sprinkle with cheese.
Repeat the layering process with the remaining tortillas, chicken mixture, and cheese.
Cover and cook on low for 4-6 hours, or until the cheese is melted and bubbly.
Serve hot, garnished with your favorite toppings.
Notes
For a spicier dish, add diced jalapeños to the chicken mixture.
