  • 2 pounds beef chuck, cut into 2-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 pound baby carrots
  • 1 pound pearl onions, peeled
  • 1 pound mushrooms, quartered

Instructions

  1. Brown the bacon in a skillet over medium heat. Remove bacon and set aside.
  2. In the same skillet, brown the beef in batches and then transfer to the slow cooker.
  3. Add onions, garlic, and bacon to the slow cooker.
  4. Deglaze the skillet with red wine, scraping up browned bits, and add to the slow cooker.
  5. Stir in beef broth, tomato paste, thyme, and bay leaves.
  6. Add carrots, pearl onions, and mushrooms.
  7. Cover and cook on low for 8 hours or until beef is tender.

Notes

  • For enhanced flavor, marinate the beef in red wine overnight before cooking.
