A rich and hearty slow cooker beef bourguignon that warms the soul and is perfect for a cozy dinner.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 slices bacon, diced
  • 4 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bottle (750 ml) red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • 8 ounces mushrooms, sliced
  • 2 tablespoons flour
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the bacon until crispy. Remove and set aside.
  2. In the same skillet, brown the beef in the bacon fat.
  3. Add onion, garlic, and carrots to the skillet and cook until softened.
  4. Transfer the beef and vegetables to the slow cooker.
  5. Add wine, beef broth, tomato paste, thyme, bay leaves, and the cooked bacon to the slow cooker.
  6. Cook on low for 8 hours or until the meat is tender.
  7. In the last hour, add the mushrooms.
  8. Before serving, mix flour with a little water to create a slurry and stir into the stew to thicken.
