- 2 pounds beef chuck, cut into 1-inch pieces
- 4 slices bacon, diced
- 4 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bottle (750 ml) red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 2 bay leaves
- 8 ounces mushrooms, sliced
- 2 tablespoons flour
- Salt and pepper to taste
- In a skillet, cook the bacon until crispy. Remove and set aside.
- In the same skillet, brown the beef in the bacon fat.
- Add onion, garlic, and carrots to the skillet and cook until softened.
- Transfer the beef and vegetables to the slow cooker.
- Add wine, beef broth, tomato paste, thyme, bay leaves, and the cooked bacon to the slow cooker.
- Cook on low for 8 hours or until the meat is tender.
- In the last hour, add the mushrooms.
- Before serving, mix flour with a little water to create a slurry and stir into the stew to thicken.
