  • 1 teaspoon cumin seeds

  • 1 teaspoon garam masala
  • 1 can coconut milk
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Rinse the lentils under cold water until the water runs clear.
  2. In a pot, heat the olive oil over medium heat. Add cumin seeds and let them sizzle.
  3. Add the chopped onion and sauté until translucent.
  4. Stir in garlic and ginger, cooking for another minute until fragrant.
  5. Add the turmeric, coriander, and garam masala; cook for another minute.
  6. Add the lentils and vegetable broth; bring to a boil.
  7. Reduce the heat and simmer for 25-30 minutes until the lentils are tender.
  8. Stir in the coconut milk and season with salt.
  9. Simmer for another 5 minutes and serve hot.
