  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Stir in bell pepper, cumin, and chili powder; cook for 2 minutes.
  4. Add lentils, broth, diced tomatoes, and corn.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  6. Stir in lime juice before serving.
