Ingredients

  • 2 cups water
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 avocado, sliced

Instructions

  1. In a medium saucepan, bring water to a boil, add rice, and cover.
  2. Reduce heat and simmer for 18-20 minutes or until water is absorbed.
  3. In a skillet, cook ground beef over medium heat until browned.
  4. Stir in taco seasoning, black beans, corn, and diced tomatoes.
  5. Mix well and heat through.
  6. In bowls, layer rice, meat mixture, lettuce, cheese, sour cream, and avocado.

Notes

  • For added spice, include jalapeños.
