  • 1 cup corn, frozen or canned
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1 teaspoon taco seasoning
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1 avocado, sliced

Instructions

  1. In a skillet over medium heat, cook the turkey bacon until crispy. Remove and chop.
  2. In the same skillet, add cooked rice, black beans, corn, and diced tomatoes. Stir to combine.
  3. Sprinkle taco seasoning and mix well. Cook for 5 minutes until heated through.
  4. Serve the rice mixture in bowls, topped with chopped turkey bacon, green onions, shredded cheese, sour cream, and avocado.
