  • 2 boneless chicken breasts trimmed
  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup Parmesan cheese shredded
  • 2 cups spinach fresh
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook until browned and cooked through, about 6-7 minutes per side. Remove chicken and slice.
  3. In the same skillet, add minced garlic and sauté for 1-2 minutes. Pour in chicken broth and heavy cream, stirring to combine.
  4. Add shredded Parmesan cheese and mix until melted and smooth.
  5. Stir in spinach and cooked pasta until well combined. Season with salt and pepper to taste.
  6. Return sliced chicken to the skillet, tossing to coat in the sauce.
  7. Serve hot and enjoy!
