Ingredients

  • 500 grams mushrooms
  • 3 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, whisk together miso paste, soy sauce, olive oil, sesame oil, garlic, and ginger.
  3. Toss the mushrooms in the miso mixture until well coated.
  4. Spread the mushrooms on a baking sheet and roast for 20 minutes, stirring halfway through.
  5. Remove from the oven and sprinkle with chopped green onions before serving.

Notes

  • For a spicier flavor, add chili flakes to the miso mixture.
  • These can be served as a side dish or a topping for rice.
