Ingredients

  • 2 medium sweet potatoes
  • 1 cup feta cheese, crumbled
  • 4 strips turkey bacon, cooked and crumbled
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4 inch rounds and place them on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper, then toss to coat.
  4. Bake in the preheated oven for about 25 minutes, or until tender.
  5. Remove from the oven and sprinkle feta cheese, turkey bacon, and thyme over each round.
  6. Drizzle honey over the top and return to the oven for an additional 5 minutes.
