A delicious and healthy shrimp stir fry that’s quick and easy to prepare, packed with high protein and served with noodles.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces noodles (rice or egg)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Cook noodles according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add garlic and ginger, sauté for 1 minute.
  4. Add shrimp and cook until pink, about 3-4 minutes.
  5. Add bell peppers and broccoli; stir-fry for another 2-3 minutes.
  6. Stir in soy sauce and cooked noodles; mix well.
  7. Season with salt and pepper to taste; serve hot.
