A hearty and nutritious soup packed with protein from turkey bacon and chicken ham, making it a perfect meal for any day.

Ingredients

  • 6 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups chicken broth
  • 1 tablespoon taco seasoning
  • 1 cup heavy cream
  • 1/2 cup shredded cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Add chicken ham, diced tomatoes, black beans, corn, and chicken broth. Stir well.
  4. Stir in taco seasoning and bring to a simmer.
  5. Reduce heat and stir in heavy cream, cooking until heated through.
  6. Serve hot, topped with chopped turkey bacon and shredded cheese.

Notes

  • For added heat, include diced jalapeños.
  • Can substitute heavy cream with a lower fat option if desired.
