A delicious and comforting potato soup with cheddar cheese, garlic, herbs, and crispy turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onions and garlic to the pot and sauté until translucent.
  3. Add the diced potatoes and chicken broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in cream, cheddar cheese, herbs, and season with salt and pepper.
  6. Blend the soup until smooth or leave it chunky as desired.
  7. Top with crumbled bacon before serving.

Notes

  • For a thicker soup, blend more of the potatoes.
  • Store leftovers in an airtight container in the refrigerator.
