Ingredients

  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup chopped kale
  • 1 diced onion
  • 2 cloves minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Stir in carrots and celery, cooking for another 5 minutes.
  4. Pour in vegetable broth and add kale, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Blend the soup if desired for a creamy texture.
