  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup shredded carrots
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the rolled oats, whole wheat flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the honey (or maple syrup), applesauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Fold in the shredded carrots, raisins, and chopped walnuts.
  6. Drop spoonfuls of the dough onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Let cool for a few minutes before transferring to a wire rack to cool completely.
