- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/3 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped nuts or chocolate chips (optional)
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the bananas until smooth.
- Add the oats, honey, applesauce, and vanilla extract to the bananas and stir until well combined.
- In another bowl, combine the baking powder, baking soda, salt, and cinnamon.
- Mix the dry ingredients into the wet ingredients until just combined.
- If desired, fold in nuts or chocolate chips.
- Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
