  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add the oats, honey, applesauce, and vanilla extract to the bananas and stir until well combined.
  4. In another bowl, combine the baking powder, baking soda, salt, and cinnamon.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. If desired, fold in nuts or chocolate chips.
  7. Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • For extra sweetness, you can add more honey or maple syrup.
  • These muffins freeze well; store in an airtight container.
