A hearty soup featuring gnocchi, turkey bacon, and chicken ham for a delicious twist on a classic Italian dish.

Ingredients

  • 2 cups potato gnocchi
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup kale, chopped
  • 1 teaspoon red pepper flakes
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté turkey bacon until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and cook until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add gnocchi and cook until they float to the top.
  5. Stir in chicken ham, kale, and red pepper flakes.
  6. Reduce heat and stir in heavy cream. Let simmer for a few minutes.
  7. Season with salt and pepper, and top with crispy turkey bacon before serving.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
