A delightful casserole combining the flavors of French onion soup with tender chicken and orzo pasta.

  • 1 pound boneless, skinless chicken thighs
  • 1 cup orzo pasta
  • 2 cups French onion soup
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chicken thighs and sear until browned on both sides.
  3. Remove chicken from skillet and set aside. In the same skillet, add orzo pasta and cook according to package instructions.
  4. Once orzo is cooked, return the chicken to the skillet, add French onion soup, and mix well.
  5. Transfer mixture to a baking dish and top with shredded mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes or until cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.
