1 pound Italian sausage
1 onion chopped
3 cloves garlic minced
4 cups chicken broth
1 can (15 ounces) crushed tomatoes
8 ounces lasagna noodles broken
1 cup heavy cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tablespoon Italian seasoning
salt to taste
pepper to taste
2 tablespoons fresh basil chopped
Instructions
In a large pot, cook the Italian sausage over medium heat until browned. Drain excess fat.
Add chopped onion and minced garlic; sauté until onions are translucent.
Stir in chicken broth, crushed tomatoes, and Italian seasoning. Bring to a simmer.
Add the broken lasagna noodles and cook according to package directions.
Reduce heat and stir in heavy cream, ricotta, mozzarella, and Parmesan until melted and creamy.
Season with salt and pepper to taste. Garnish with fresh basil before serving.
Notes
This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
For a vegetarian version, substitute sausage with mushrooms or lentils.
