2 pounds boneless, skinless chicken thighs
1 can (14 oz) coconut milk
1 cup diced tomatoes
1 large onion, diced
4 cloves garlic, minced
2 tablespoons ginger, minced
2 tablespoons garam masala
1 tablespoon ground cumin
1 teaspoon turmeric
1 teaspoon chili powder
salt and pepper to taste
1/4 cup fresh cilantro, chopped
Instructions
Place the chicken thighs in the bottom of the crockpot.
In a mixing bowl, combine coconut milk, diced tomatoes, onion, garlic, ginger, garam masala, cumin, turmeric, chili powder, salt, and pepper. Mix well.
Pour the mixture over the chicken in the crockpot.
Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
Once cooked, shred the chicken with two forks and stir it back into the sauce.
Garnish with fresh cilantro before serving.
