A rich and satisfying creamy taco soup made with turkey bacon that warms the soul.

Ingredients

  • 1 pound turkey bacon
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon taco seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese for topping

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and crumble.
  2. Sauté onion and garlic in the bacon drippings until softened.
  3. Add black beans, corn, diced tomatoes, chicken broth, heavy cream, taco seasoning, salt, and pepper.
  4. Bring to a simmer and cook for 15 minutes.
  5. Serve hot, topped with crumbled bacon and shredded cheese.

  • This soup can be made ahead of time and stored in the refrigerator.
