- 1 pound turkey bacon
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon taco seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese for topping
- In a large pot, cook the turkey bacon until crisp. Remove and crumble.
- Sauté onion and garlic in the bacon drippings until softened.
