A deliciously creamy pasta salad infused with street corn flavors and topped with turkey bacon.

Ingredients

  • 8 ounces elbow macaroni
  • 1 cup corn kernels
  • 6 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Cook macaroni according to package instructions. Drain and set aside.
  2. In a skillet, cook turkey bacon until crispy. Remove and chop.
  3. In a large bowl, combine cooked macaroni, corn, cherry tomatoes, and chopped bacon.
  4. In a separate bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  5. Pour dressing over salad and toss to combine.
  6. Garnish with cilantro and serve chilled.

Notes

  • Feel free to add jalapeños for extra spice.
  • Can be made a day in advance for flavors to meld.
