- 8 ounces elbow macaroni
- 1 cup corn kernels
- 6 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Cook macaroni according to package instructions. Drain and set aside.
- In a skillet, cook turkey bacon until crispy. Remove and chop.
- In a large bowl, combine cooked macaroni, corn, cherry tomatoes, and chopped bacon.
- In a separate bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Garnish with cilantro and serve chilled.
