  • 4 chicken thighs
  • 2 cups mushrooms, sliced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add the chicken thighs and sear each side until golden brown.
  3. Remove chicken and set aside. In the same skillet, add onions and garlic, sautéing until translucent.
  4. Add mushrooms and cook until soft, then pour in the heavy cream.
  5. Add salt, pepper, and thyme. Stir to combine.
  6. Return chicken to the skillet, spooning the sauce over it. Transfer the skillet to the oven and bake for 20-25 minutes.
  7. Serve warm with sauce over the top.
