- 4 chicken thighs
- 2 cups mushrooms, sliced
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add the chicken thighs and sear each side until golden brown.
- Remove chicken and set aside. In the same skillet, add onions and garlic, sautéing until translucent.
- Add mushrooms and cook until soft, then pour in the heavy cream.
- Add salt, pepper, and thyme. Stir to combine.
- Return chicken to the skillet, spooning the sauce over it. Transfer the skillet to the oven and bake for 20-25 minutes.
- Serve warm with sauce over the top.
