  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 8 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes with green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add canned tomatoes, black beans, corn, shredded chicken, and taco seasoning, stir well.
  3. Pour in chicken broth, bring the mixture to a boil.
  4. Reduce heat and let it simmer for 20 minutes.
  5. Stir in heavy cream and cheese, simmer for another 5 minutes.
  6. Serve hot, topping with your favorite toppings.
