A delicious and easy-to-make Chicken Burrito Casserole that the whole family will love.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups salsa
  • 3 cups tortilla chips, crushed
  • 2 cups shredded cheese, Mexican blend
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, black beans, corn, taco seasoning, and salsa.
  3. In a greased casserole dish, layer half of the crushed tortilla chips on the bottom.
  4. Add half of the chicken mixture on top of the tortilla chips, then sprinkle with one cup of shredded cheese.
  5. Layer the remaining tortilla chips, chicken mixture, and cheese on top.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden.
  7. Garnish with chopped cilantro before serving.

Notes

  • For a spicier version, add jalapeños to the chicken mixture.
  • Feel free to substitute ground beef or turkey for the chicken.
