- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 2 cups salsa
- 3 cups tortilla chips, crushed
- 2 cups shredded cheese, Mexican blend
- 1/4 cup chopped cilantro
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the chicken, black beans, corn, taco seasoning, and salsa.
- In a greased casserole dish, layer half of the crushed tortilla chips on the bottom.
- Add half of the chicken mixture on top of the tortilla chips, then sprinkle with one cup of shredded cheese.
- Layer the remaining tortilla chips, chicken mixture, and cheese on top.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
Notes
- For a spicier version, add jalapeños to the chicken mixture.
- Feel free to substitute ground beef or turkey for the chicken.
