A delicious twist on a classic breakfast, these Bacon Egg and Cheese Breakfast Quesadillas with Turkey Bacon are perfect for a quick meal.

Ingredients

  • 4 large eggs
  • 2 slices turkey bacon
  • 1 cup shredded cheese
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  2. In the same skillet, add olive oil and scramble the eggs, seasoning with salt and pepper.
  3. Add the chopped bacon and cheese to the eggs and mix well.
  4. Place the mixture evenly on half of each tortilla and fold over.
  5. Cook the quesadillas in the skillet until golden brown on both sides.
